Mexican Lentils

Ripped off from Dhal

Another made-up Mexican side dish because I don't really like the limited number I have in my Mexican cookbook

I chose to add some of the flavours to a sour cream dressing rather than put everything in the main thing

Method

Heat the oil and fry the onion for a few minutes then add the garlic and cook for another minute or so

Add the ground spices and fry for 30 seconds or so

Add the lentils and stir it all round then put enough water to cover plus about another half

Bring it to a simmer and watch it so it doesn't dry out. Top it up if you need to

It's done when the red lentils are a paste and the green ones are nice and tender

meanwhile crush the garlic into a paste with salt and finely chop a packet of fresh coriander and mix them into the sour cream
