This is a truly beautiful thing.

Look at the previous recipe (salt beef) about a week before you want a sandwich. Yeah, I know.

You can have this in a bagel, but it’s clasically toasted bread. This is a soft roll toasted and rubbed with garlic before the other ingredients go in. But any bread you fancy works.

Rubbing the bread with garlic is my idea, but it’s a lovely thing to do with toast before you add anything savoury to it.

Method

Make your salt beef and if it is still hot then slice it thinly. If not then take it out of the cold liquor, slice what you need and put it in a little pan with enough of the liquor to just cover it. Put the rest of the beef back in the container with the liquor.

Gently heat it, you don’t need to bring it back to a simmer.

Dress the pickles. Put the sliced pickles in a bowl and add mayo, pepper, mustard, horseradish and chilli and mix it together

Toast the bread and rub it with garlic (on the side than will be inside the sandwich). Then butter it.

Layer the cheese, the beef and the dressed pickles in the sandwich and put the lid on.

That’s it!
