What a Pulava!

This started as a conversation with Meg about rice (I know).

So I decided to cook something like a Biriani but we fancied Italian so I thought something like that but with Italian flavours and using risotto rice iinstead of Basmati

I wondered what an Indian word for Risotto might be and love the fact that it could be "Pulava"

Directions

Follow the recipe for plain rice but adjust for the fact that short-grain rice is 1.5 times as much water rather than twice as much

Cook the chicken in a an in a little olive oil and when it's done add the other in gredients and stir it round for a minute or two to coat

Layer the rice and the chicken in an ovenproof dish and bake for 15 minutes

Ingredients

  • Risotto rice
  • 1 checken breast per person, sliced
  • 1 tblsp shop-bought pesto per breast
  • 2 anchovies
  • a few capers
  • a bunch of basil chopped or torn
  • Olive oil
