Directions
Start a big pan of water with alid on – you want it to boil obviously
Put some oil in a pan and gently fry the chicken – you want to cook it but not brown it
When it is pretty much cooked, drain all of that horrible watery stuff that seems to come out of modern meat, replace the oil and chuck in the anchovies
Then add the pesto – not too high a heat, you want to heat it through but not really cook it.
When the water is boiled cook the pasta as it says on the packet.
When the pasta is nearly done, chuck in the capers and chop the basil and put that in too

- Pasta – any dried or fresh 100-120g per person
- Chicken – roughly one breast per person
- A jar of pesto
- A handful of capers
- A couple of anchovies
- A packet of basil
- Olive Oil
