Spud Curry

Taazi Khumben Alu Mattar Kar - or curried mushrooms, potatoes and peas to you and me.

This is slightly adapted from a recipe in Charmaine Solomon's Complete Asian Cookbook

Directions

Heat the oil and fry the onion for a few minutes

Add ginger and garlic and fry for a couple more minutes

Add turmeric and chilli powder and fry for 1 more minute

Add the mushrooms and potatoes and the water and salt and give it a stir

Put the lid on and cook it gently for 15 minutes

Add the Garam Masala and coriander and give it a stir, put the lid back on and cook for another 15 minutes or a bit longer if the potatoes need it

Ingredients

  • 400g mushrooms
  • 400g small new potatoes (waxy)
  • frozen peas - you can guess the amount, about a cupful
  • 1 tblsp oil
  • 1 sliced onion
  • 1 tsp chopped or grated fresh ginger
  • 1 clove of garlic, crushed or finely chopped
  • 1 tsp ground turmeric
  • 1/2 tsp chilli powder - or as much or little as you like
  • 1/2 cup hot water
  • 1tsp salt
  • 1tsp Garam Masala
  • Handful of chopped coriander
